Squid Relleno
Squid Relleno, Pusit or calamares rellenos. This is another tasty seafood dish that many people would loved to eat. This recipe is simple and easy to cook.
Ingredients:
- 4 medium-sized squids or calamares
- 2 cups water
- 2 tbsps vinegar
- 1 tbsp soy sauce
- 4 tbsps shortening
- 1 small chopped garlic
- 1 medium chopped onions
- 2 medium chopped tomatoes
- salt
Fillings:
- 1/2 cup boiled shrimps, finely chopped
- 1 cup chicken and pork meat, finely chopped
- 1 small onion, minced
- 1/2 cup soft bread crumbs soaked in milk
- 1 or 2 eggs
- salt and pepper to taste
Procedure:
- Remove heads, tentacles and ink bags of squids. Clean each thoroughly and season the cavity with salt.
- Stuff squid's cavities well up to the neck with the mixed filling ingredients. Put back the heads and sew in place.
- Put squids in a shallow pan, cover with a mixture of 2 cups water, 2 tbsps vinegar, 1 tbsp soy sauce, 4 tbsps shortening, chopped garlic, chopped onions and chopped tomatoes.
- Salt to taste. Simmer gently until calamares are cooked and liquid reduced to almost half.
- Remove stuffed squids and serve with sauce strained over them.

Very interesting recipe. Oddly enough my dinner was very similar. Back home in Portugal we also have a version of stuffed squid, but mostly with meat and the tentacles. Will try this one next time. Thanks
