Brownies with cocoflour

browniesBrownies come in many forms and flavors. They are either fudgy or cakey, depending on their density, and they may include nuts, frosting, cream cheese, chocolate chips, or other ingredients.  Brownies with cocoflour is a healthy variety of brownie because of the added coconut. It is high in fiber and low in carbohydrate making it ideal for any person who need to reduce their carbohydrate intake


Brownies with Cocoflour
Ingredients:
- 1 cup butter
- 1⁄4 cup coconut flour
- 2 cups sugar
- 1⁄2 tablespoon baking soda
- 6 pieces eggs
- 1⁄2 teaspoon salt
- 1 teaspoon vanilla
- 1 cup cocoa
- 3⁄4 cup all purpose flour
 -1 cup chopped nuts

Procedure:
1. Cream butter, then add sugar gradually.
2. Add eggs one at a time mixing well after each addition. Mix in vanilla.
3. In another bowl, mix together all purpose flour, coconut flour, baking soda, salt and cocoa.
4. Add flour mixture to the creamed butter and mix until well blended. Add 1/8 cup of chopped nuts.
5. Pour into greased pan. Smoothen surface with a rubber scraper and top with the remaining nuts.
6. Bake for 350oF for about 15 minutes.

Yield: 36 brownies

Cake "Sans Rival"

Ingredients:
- 8 egg whites
- 1 cup sugar
- 1 1/2 cups nuts, finely chopped

Filling:
- 8 egg yolks
- 1 cup sugar
- 1/2 cup water
- 1 tsp corn syrup
- 1/3 pound fresh butter
- 1/2 cup chopped nuts

Procedure:
- Beat egg whites until stiff and foamy. gradually add 1 cup sugar, beating continuously, until soft peaks are formed. Add finely chopped nuts. Grease four 9" x 14" cookie sheets and dust lightly with flour. Pour mixture into four sheets and spread thinly. Bake in preheated oven (300oF) until golden brown (about 30 min). Remove from cookie sheets. Set aside to cool.

- Put 1 cup sugar, 1/2 cup water and 1 tsp corn syrup in saucepan and set to boil without stirring. When thick enough to form a soft ball when dropped in a saucer of water, remove from heat and cool.

- Beat egg yolks until lemon- colored. Add syrup little by little, beating well.

- Cream butter and when syrup mixture is sufficiently cool, add little by little while continuing to cream Spread layers with butter mixture and put together, one on top of the other, sandwich fashion. Spread top layer and sides with more butter mixture and sprinkle with chopped nuts. Chill before serving.


Party Pastillas

pastillasPastillas is also one of my favorite candy dessert. It is popular among OFW as gifts or presents to their loved ones here and abroad.

Ingredients:
- 1 3/4 cups powdered whole milk
- 2- 3 tsp chocolate powder
- 1/2 can (14 ounces) sweetened condensed milk
- 1/4 cup chopped nuts (cashew, pili, peanuts, etc.)

Procedure:
- Combine milk and chocolate in a bowl.
- Pour condensed milk and nuts into the mixture and mix well.
- Sprinkle sugar on a board and spread out the mixture with a rolling pin to desired thickness.
- Cut into pieces and wrap in colored cellophane.

Yield: 2 1/2 to 3 dozens.
