Adobong Labong
Bamboo shoot Adobo or Adobong Labong in Tagalog.
Ingredients:
- 3 cups labong (bamboo shoot), minced and blanced
- 1/2 cup pork, boiled tender and minced
- 1/2 cup shrimps, minced
- 5 segments garlic, chopped
- 1/2 bay leaf
- 4 tbsp vinegar
- 1 1/2 tbsp patis (fish sauce)
- 1 medium- sized onion, chopped
- 2/3 cup shrimp and meat stock
- 5 tbsp fat
Procedure:
- Brown garlic and onion in fat. Add pork and shrimps. Continue cooking mixture in fat, stirring constantly until shrimps are almost cooked. Add patis (fish sauce), bay leaf and stock then the labong (bamboo shoot).
- Simmer until labong is cooked and then add the vinegar. Continue simmering until almost all liquid has evaporated. Add fat and cook about 6 minutes more. Season to taste.
