Longganisa

longganisaLongganisa, is a native sausage in the Philippines which is also called as chorizo or longaniza, flavored with indigenous herbs and spices.

Ingredients:
- 1 kg pork meat with 10% fat
- Salt (1 to 2 tbsp)
- 1 tsp pepper
- 1/2 cup vinegar
- 1 head clove garlic, chopped
- 2 tsps paprika
- 1/4 tsp prague powder

Procedure:
- Into the ground pork, add salt and mix thoroughly. Add pepper, vinegar, garlic, paprika, prague powder and sugar then mix well.
- Let it stand one to two hours.
- Fill sausage casings with mixture, tie at both ends and dry in the sun.

- When ready to cook, heat oil in the frying pan and fry batches of longganisa until fully cooked.
- Drain on paper towels. arrange in platters and garnish with tomatoes and spring onions, if desired. 
- Serve.
