Embutido
Embutido Ingredients:
- 1 kg ground pork
- 1 cup bread crumbs, soaked in 1/2 cup milk
- 3 tbsp. minced green bell pepper
- 3 tbsp. minced red bell pepper
- 1/2 cup finely chopped carrots
- 2 Chorizos de Bilbao, chopped fine
- 2 eggs, beaten
- 3 tbsp sweet pickles, chopped fine
- 3 tbsp seedles raisins
- Salt and pepper to taste
- Slices (wedges) of hardboiled egg
- Slices (wedges) of Vienna sausage
Procedure:
- Mix all ingredients.
- Spread and flatten the mixture onto the center of each aluminum foil.
- Evenly divide the slices of hardboiled eggs and sausages so that each mixture gets an equal share. Place the slices at the center of each mixture.
- Carefully roll the aluminum foil into a tightly packed log about 1 inch to 2 inches in diameter, sealing on both ends.
- Place the wrapped embutido in a steamer and steam for an hour.
- Let cool and slice it into rings and serve with liver or tomato sauce.
- To make sauce, boil broth in which roll was cooked, simmering it down to desired quantity. Thicken with liver paste or tomato puree and season to taste with salt and pepper.
